Wakame Seaweed Salad
Any Japanese food addicts out there? I am definitely one of them and besides sushi, I have recently discovered Wakame salad, a deliciously fresh and crunchy seaweed salad. Words cannot describe how tasty this dish is!
The texture, the flavour, it is the perfect side dish to any rice dish or sushi platter. Not only does it taste good, seaweed is also super healthy. Wakame, a variety of seaweed is rich in protein, fibre, vitamin K and folic acid, while being low in calories and fat.
You can buy Wakame in almost all Asian supermarkets. You can buy it either dried, cut or uncut, or a lot of supermarkets sell ready Wakame and you only need to vamp it up with some carrot, vinegar and sesame at home before serving.
So, how do we makes this amazingly tasting and healthy salad? It is super easy and fast!
This recipe serves 4, or 1 if you are an addict like me ;). You will need the following ingredients:
- 25 g dried wakame seaweed (cut into 1/2 inch strips)
- 2 tbsp non-seasoned rice vinegar
- 1 tbsp lemon juice
- 3 tbsp light soy sauce
- 1 tbsp sesame oil
- 1 tsp sugar
- 1 tsp finely grated ginger
- 1 small garlic clove, minced
- 1/4 cup shredded carrot
- fresh cilantro
- sesame seeds, toasted
Soak the wakame in warm water for about 5 minutes then drain, rinse and squeeze out any excess water.
Stir all the ingredients together, except for cilantro and sesame seeds. Toss in the seaweed, carrots and cilantro and combine well. Sprinkle on some toasted sesame seeds for extra flavour and voila!
The longer you leave it to marinade, the better it tastes, in my opinion.
How easy was that? I just can’t get enough of this salad. I’m even thinking of how I could work it into my Christmas menu lol.
